Ingredients

  • 1 cup pumpkin purée (fresh or canned, unsweetened)
  • 2 eggs
  • 1/3 cup coconut oil (or olive oil)
  • 1/2 cup coconut sugar or maple syrup
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1/2 cup oat flour (or ground oats)
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chunks (70% or higher)

Instructions
1. Preheat oven to 180°C (350°F). Line a loaf pan or cake tin with parchment paper.
2. In a bowl, whisk together pumpkin, eggs, oil, sweetener, and vanilla.
3. In another bowl, mix dry ingredients: flours, cocoa, baking soda, spices, and salt.
4. Combine wet and dry mixtures. Fold in chocolate chunks.
5. Pour into pan and bake for 35–40 minutes, or until a toothpick comes out clean.
6. Let cool. Serve with a dollop of lactose-free yogurt or a drizzle of tahini for extra
glow.
