Inner Beauty Walnut Cake

A gentle, skinloving recipe with healthy fats, fiber, and a soft sweetness.

Ingredients (serves 8–10)

• 1 cup finely ground walnuts (like a soft walnut flour)

• 1 cup plain yogurt (or Greek yogurt for extra creaminess)

• 2 eggs

• 3 tbsp olive oil or walnut oil

• 3 tbsp honey or maple syrup

• 1 tsp vanilla extract

• 1 cup oat flour (or blended oats)

• 1 tsp baking powder

• ½ tsp cinnamon

• A pinch of salt

• Optional: zest of 1 lemon for brightness.

Instructions

1. Preheat your oven to 170°C and line a small cake tin with parchment.

2. In a bowl, whisk the eggs, yogurt, oil, honey, and vanilla until smooth.

3. Add the ground walnuts, oat flour, baking powder, cinnamon, salt, and lemon zest if using.

4. Mix gently until the batter is even — it will be slightly thick and nutty.

5. Pour into the tin and smooth the top.

6. Bake for 25–30 minutes, until golden and lightly springy.

7. Let it cool before slicing; it becomes even more tender as it rests.
